Make it Monday: Pumpkin Energy Bars

Pumpkin, oatmeal, chocolate chip, coconut energy bars! 

4 cups of old fashioned oats
2 cups canned pumpkin
2 eggs
1tbsp cinnamon
1 tbsp stevia
1/2 cup chocolate chips
1/2 cup shredded coconut
1/2 chopped walnuts
1tbsp coconut oil

Mix everything together in a large bowl.

Spread out evenly onto a greased pan.

Bake at 350 for 35-30 minutes!
Go make these now! And stock up on canned pumpkin because you will want these year round!!!
