Make it Monday: Grilled Banana French Toast

Breakfast is absolutely one of my families favorite meals. We don't just eat breakfast for breakfast either! Having breakfast for dinner is a perfect way to change up that dinner routine, especially when you feel like you cook the same things over and over! (We call it "brinner" at  my house) Here is one of my favorite breakfast for dinner meals.

Ingredients: 
4 slices of Ezekiel bread 
2 eggs and 2 egg whites 
1/4 cup of skim milk
1/2 tsp of vanilla extract 
2 medium bananas halved and sliced lengthwise 
1 tsp of flax seed
cinnamon to taste

Directions;
Whisk eggs, egg whites, cinnamon, skim milk and vanilla

Submerge bread slices into egg mixture and place on grill or pan.
Cook 3-5 minutes on each side or until desired crispness is reached.

Place sliced bananas on grill and cook for 1-2 minutes per side. 

Top French toast with bananas slices and sprinkle with flax seed. If you would like  additional toppings try honey, melted almond butter, natural peanut butter, or Walden Farms calorie free syrup.
