Make it Monday: Chicken Apple Wraps
While I am on vacation this week with my sister and our kiddos, my girls are busy working hard at the Women Run Walk Memphis expo and Stars and Stripes 5k! I am feeling kind of bad that it is a busy week for GRT901 and I have my toes in the sand!
My sister and I are as opposite as night and day.Grocery shopping together can be quite comical. I want natural peanut butter she wants what's on sale. I say watermelon, she says cantaloupe. Needless to say our grocery bill this week will be huge but, I wouldn't trade it for anything. All that said, I wanted to share a recipe that my sister found at justapinch.com that she just knew we would both love and we do! We made it already and it is a perfect light meal for a day on the beach. Enjoy!
1/2 c chopped cooked chicken breast
3 Tbsp chopped fuji apple
2 Tbsp chopped black or red grapes
2 Tbsp natural peanut butter, crunchy
1 Tbsp greek yogurt
2 tsp honey
1. Chop chicken meat and fruit. Mix in bowl.
2. Mix in peanut butter, honey, and yogurt.
3 Spoon into open lettuce leaf, roll up and serve. You can also place in flatbread or any other kind of wrap.
