Make it Monday: Turkey Sausage Zucchini Boats

This is one of my favorite family meals. I love recipes that are easy, have just a few ingredients, my family will eat, and are healthy! For us, this one has all of those. Enjoy! 

Turkey Sausage Zucchini Boats

3 medium zucchini, cut lengthwise
1 1/4 c marinara sauce
(1 tsp olive oil, 1/2 tsp minced garlic, 1/4 tsp salt, 1/4 tsp pepper)
1/2 small onion, finely chopped
1/2 c diced red bell pepper
14 oz smoked turkey sausage, finely diced
1/2 c part skim mozzarella

Scoop out zucchini guts (yeah, that's right!), leave 1/4 " thin shell. Chop 'guts'; set aside. Add zucchini shells to pot of boiling water; cook 1 min. Remove and drain. In a large baking dish, spread 1/4 c marinara sauce in the bottom. Place zucchini in dish cut side up. Brown sausage; set aside. Saute garlic, onion & bell pepper in oil 2-3 min. Add chopped zucchini 'guts', salt, pepper; cook 2-3 min. Stir in sausage. Divide filing evenly into each zucchini. Top w remaining sauce & mozzarella. 
Cover with foil; bake 35 min @ 400.
