Make It Monday: Greek Salad

Do you like to eat out? My family sure does, but that takes it's toll on the budget not to mention the higher caloric count in many prepared dishes. As a result, I try to replicate some of our favorite dishes from local restaurants into a lower calorie and cheaper version that we can eat more often.

For those in the Memphis area, have you had the Greek Salad at Memphis Pizza Cafe?? It is so yummy!

Well, here is my own version of this tasty salad that I pack for lunch frequently. It is simple to make and can be made as a lunch for 1, or dinner for the whole family.

Here's what you will need:
Spinach or Spring Mix
Cherry tomatoes
Feta cheese (any flavor)
Turkey Pepperoni
Peperoncinis (Deli Sliced)
Hendrickson's Sweet Vinegar & Olive Oil dressing*

Note: the dressing is Gluten free
